CREAMY LEMON, ASPARAGUS
&
TUNA PASTA
This delicious, easy and QUICK pasta will be on your table in around 15 minutes and will be sure to satisfy even the pickiest of eaters! It has a good serving of protein-rich tuna (which always helps me justify a big bowl of carby pasta) served with a side of steamed broccolini or some crusty bread, it's truly the perfect weeknight meal. If you are not a fan of tuna, diced chicken would work just as well- or vegetarians can skip the meat and substitute with mushrooms.
This is one of our favourite dishes when we can't be bothered putting too much effort in- but still want maximum satisfaction- and let's face it, who doesn't feel satisfied after a big bowl of pasta?! It's also one of those recipes you can use whatever leftover vegetables are in the bottom of your fridge- a zucchini that's seen better days?--- Sure, chuck it in. Handful of peas?- Yep- go straight ahead! Most vegetables will work as this dish is not an overpowering flavour- just a delicious mild, creamy sauce. YUM!
INGREDIENTS:
- 100g dried pasta- we prefer bowties for this recipe
- 2 bunches asparagus, trimmed, cut into 2cm lengths
- 425g can tuna in olive oil, drained, flaked
- 1 cup thin cream or PHILADELPHIA cooking cream (low fat works too)
- 2 teaspoons lemon zest
- squeeze lemon juice as desired
- 1 tablespoon extra-virgin olive oil
- 1 brown or red onion- finely diced
- 2-3 cloves minced garlic
- fresh parmesan cheese for garnish
INSTRUCTIONS:
Firstly cook pasta in a pot of salted water, until al-dente- and set aside.
In a separate pan- add oil, minced garlic, onion and chopped asparagus. Lightly fry for approx 5 minutes. Add cream, lemon zest and tuna. Toss pasta through the sauce, add a small squeeze of lemon juice and a generous shaving of fresh parmesan cheese. Salt & pepper to taste.
That couldn't be much easier, could it? ENJOY! x
