GARLIC MUSHROOM PASTA

I'm not shy admitting that I just can't be bothered making fresh pasta- there, I said it- I'm lazy. I know lots of people who swear by putting in the hard yards to create golden ribbons of deliciousness - I am the first to bow down to you- truly-  I am literally bowing down as I type this.

I however, am of the opinion that fresh STORE BOUGHT pasta (you know, where the professionals do the dirty work for you and you simply hand over $11) is more up my alley. Don't get me wrong- there is definitely satisfaction in making things from scratch, but for me pasta is not one of them. In saying that- if you can be bothered making it from scratch, who am I to talk you out of it? Go ahead and get sticky hands, a filthy kitchen and end up cursing at the fancy $150 Italian pasta machine you bought for your husband 2 years ago which he hasn't used ONCE. Oh sorry, that's my  story- not yours.

Now- be warned: I'm going to state the obvious in .......... 3, 2, 1...........you have to REALLY love garlic to enjoy this recipe. I know- what a revelation! On a scale of 1- 10, it would rate a good 8 in garlicky-ness (which is totally a real word). I can't get enough of the stuff- I sometimes even throw in a couple of extra cloves if I don't have to see anyone the following day (week?).

This recipe is delicious, quick* and easy*- so in my eyes, you cant go wrong! Enjoy!

*That's if you buy the pasta, otherwise all bets are off.

 

INGREDIENTS:

  • 1 lb linguine, cooked al dente
  • 6 tablespoons butter
  • 10 cloves garlic, minced
  • 6 cups mushrooms, sliced (we used 3 types & I left some whole) 
  • 1 teaspoon dried basil
  • 1/4 teaspoon salt
  • pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • parmesan cheese, grated
  • OPTIONAL- crumbled goats cheese/squeeze of lemon

DIRECTIONS

  1. In a skillet melt 2 tbsp Butter.

  2. Add garlic, allow to brown, then add mushrooms, basil, salt & pepper.

  3. Cook until the mushrooms are just tender.

  4. Add remaining butter and olive oil.

  5. Stir and remove from heat.

  6. When Pasta is cooked reheat the sauce add parsley

  7. Mix with pasta (add goats cheese/lemon if you wish).
