APPLE PIE (CAKE) SLICE

I've been spending a lot of my time over the past few weeks trawling the internet for anything that takes my fancy (fashion, travel, FOOD). I've had some really successful recipes (like this little gem) and then some absolute shockers (yes avocado and chocolate bread, I'm looking at you).

This 6 ingredient apple pie cake slice is definitely worth sharing though. I'm not sure if it should be called a cake or slice, it's definitely "cakey" but it also is stodgy and fairly flat.....so you decide! I promise if you like cake and apple pie (I mean seriously- who doesnt? Maybe Victoria's Secret Angels?), I can pretty much guarantee you will enjoy this. Did I mention how easy it is? I would go as far to say BASIC. I'm not sure it's even possible to stuff it up- and this is coming from someone who has stuffed up scrambled eggs- (yes, sadly I'm being serious). 

Best eaten warm(ish) with a scoop of vanilla bean ice-cream or a splash of cream. It's buttery and comforting and will be on regular rotation in this house- especially as the cooler weather creeps in over the next couple of months. It may not be the fanciest (or prettiest) dessert, but it certainly hits the spot when you are curled up infront of the TV in PJs!

INGREDIENTS:

2 cups self raising flour
1 cup sugar
3 apples, peeled, cored and diced (1cm)
125g butter
Several good shakes of cinnamon
1 egg

DIRECTIONS:

Toss apples with self raising flour, cinnamon and sugar in a medium mixing bowl.

Melt butter in a small saucepan on the stove-top or in a small bowl in the microwave. Stir in egg.

Pour butter and egg into the apple mixture and mix until combined.

Spoon into a greased and lined slice tin.

Bake at 180 C for 35 to 40 minutes or until the top is golden brown and a skewer inserted into the middle comes out clean.

 

Keeps for about 3 days, if it lasts that long in your house!
