BEST EVER BIRCHER

A couple of months ago when we were visiting Bali, I woke up feeling like something a little different for breakfast. Normally I'm an eggs and toast kinda girl on holidays (with a side of hash browns thrown in for good measure). That particular morning I craved something a little healthier, knowing in a few days I would be in Paris inhaling any pastry I could get my hands on. So, against my better judgement- I chose the Bircher muesli with fresh fruit- feeling pretty smug about my healthy choice, my body is a temple blah blah blah.
OH MY GOODNESS.........I had forgotten just how good bircher muesli is. How did I forget this?? Seriously. Amazing. Could have eaten 7 bowls in a row amazing. Which would have defeated the whole purpose of being healthy. I did actually consider visiting the kitchen and giving the chef a quick kiss and then stealing the recipe, but then figured it may be a little inappropriate (the recipe part, that is).
So after a few fails in the recipe (they were just ok, not great)- I think I have come up with a pretty good substitute. It's not exactly the same- now I think back on it, I think our hotel may have put real cream in their version. The texture was just too rich & creamy for it to be anything else (and the bathroom scales agree- yes Belinda, it was definitely cream - maybe even clotted).
This recipe is delicious and really filling- which is handy for me- I'm the person who gets hungry about an hour after eating (have I got a problem--- is this normal?) Well this bircher muesli drags that out to 1 hour 10 minutes. KIDDING. It tides me over until lunch, when I can put my snout back into the trough.
.........Now, I better get back to booking our accommodation for our USA trip in 3 weeks. Yep, we have nothing booked and it's Labor day over there. Just saying that gives me heart palpitations. I'm normally organised months in advance- yet I am still on pinterest looking up pretty pictures? Oh my.

INGREDIENTS:
1 1/2 cups of rolled oats
250ml full cream milk
125ml apple juice
1 tablespoon of honey (I have done it with and without and both are good).
1/3 cup of sultanas
1/2 cup BLACK SWAN BREAKFAST yoghurt (extra for serving if desired)
2 tablespoons dried pineapple or dried payapa- chopped
1/2 a golden delicious or royal gala apple, coarsely grated
Chopped Kiwi Fruit, Papaya, Peach, Strawberries & Blueberries for garnish ( use as little/much as you like- but blueberries are a MUST for me.)
Almond flakes for garnish (or any other nuts/seeds you like).
METHOD:
Mix oats, milk, juice, honey and sultanas in a bowl, cover and refrigerate overnight.
Mix in the yoghurt, grated apple and dried pineapple.
Garnish with fresh fruit and a few flaked almonds.
